Kale Frittata – 'n Gesonde ontbytbak

Ek het uiteindelik die perfekte bron gevind om eiers te koop, gelukkig! 'N Plaaslike vriendin van my dogter se ryinstrukteur het baie hoenders en te veel eiers sodat sy en haar man self kan eet. Hul hoenders word bederf met 'n geïsoleerde hoenderhuis en verwarmingslampe, sodat hulle gesellig bly tydens koue winternagte. Die diere kry uitstekende voer, wat u kan sien in die kleur van die donkergeel eiergeel en die uiters harde dop. Ek is nou op die weeklikse afleweringslys vir eiers en met my heel eerste bondel het ek frittata spesifiek gemaak, boerenkoolfrittata met vars Parmesan -kaas en pittige pepperoni.

My gesin is mal oor hierdie boerenkool frittata en hulle is altyd bly as hulle dit op die spyskaart sien. Dit is eenvoudig en vinnig om voor te berei, maar ook 'n baie gesonde en geharde maaltyd. Ideaal vir ontbyt of aandete. Geniet dit!


  • 8 groot organiese eiers
  • 3 eetlepels vars gerasperde Pecorino Romano of Parmesan kaas, verdeel
  • & frac14 teelepel growwe kosher sout
  • & frac14 teelepel varsgemaalde swartpeper
  • 3 eetlepels ekstra-olyfolie
  • 1 medium ui, in dun skyfies gesny
  • 1 tros organiese boerenkool of rooi sny (ongeveer 10 gram), stingels en middelste ribbes weggesny, blare grof gekap
  • 2 gram pepperoni of dun gesnyde Italiaanse pittige salami, in stukke van ongeveer 12 duim gesny (ongeveer 8532 koppies)
  • 1 knoffelhuisie, fyngekap
  1. Voorverhit braaikuiken.
  2. Klits al die eiers, 1 & frac12 eetlepels kaas, & frac14 teelepel sout, en & frac14 teelepel peper in 'n groot bak.
  3. Verhit olyfolie in 'n medium braaipan teen braaipan oor medium hitte. Voeg ui by en soteer tot sag, maar nie bruin nie, sowat 6 minute.
  4. Voeg boerenkool/ rooikool in drie sarsies by totdat elkeen begin verwelk voordat dit bygevoeg word. Besprinkel met sout en peper. Soteer tot enige vloeistof in die pan verdamp het. Verhoog die hitte tot medium hoog, voeg salami en knoffel by die pan en roer 1 minuut. Voeg eiers by die pan en roer om eweredig te versprei. Verlaag hitte tot medium-laag, bedek en kook tot eiers amper gestol, maar nog steeds klam in die middel is, ongeveer 4 minute. Sprinkel die oorblywende 1 & frac12 eetlepels kaas bo -oor.
  5. Plaas die frittata na die braaikuiken en kook net tot dit in die middel gestol is en begin bruin word, ongeveer 1 minuut.
  6. Maak die frittata langs die rande los met 'n buigsame spatel. Skuif die frittata uit op die bord. Bedien warm of by kamertemperatuur.

Instead I diced some chorizo and sauteed that for a while, let it cool then added it to the egg mix along with the kale.
I also sauteed small cubes of potato, in the same pan the chorizo was cooked in, and added 1tsp smoked paprika, before adding that too.

Kale Frittata – A Healthy Breakfast Casserole

I finally found the perfect source to purchase eggs, lucky me! A local friend of my daughter’s riding instructor has lots of chickens and way too many eggs for her and her husband to eat all by themselves. Their chickens are spoiled with an insulated chicken house and heating lamps, so they stay cozy during cold winter nights. The animals receive excellent feed, which you can see in the color of the dark yellow egg yolk and the extremely hard shell. I am now on the weekly egg delivery list and with my very first batch I made frittata to be specific, kale frittata with fresh Parmesan cheese and spicy pepperoni.

My family loves this kale frittata and they are always happy when they see it on the menu. It is simple and quick to prepare, but also a very healthy and hardy meal. Perfect for breakfast or dinner. Geniet dit!


  • 8 large organic eggs
  • 3 tablespoons freshly grated Pecorino Romano or Parmesan cheese, divided
  • ¼ teaspoon coarse kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 eetlepels ekstra-olyfolie
  • 1 medium ui, in dun skyfies gesny
  • 1 bunch organic Kale or Red chard (about 10 ounces), stems and center ribs cut away, leaves coarsely chopped
  • 2 ounces pepperoni or thinly sliced Italian spicy salami, cut into ½-inch pieces (about ⅔ cup)
  • 1 knoffelhuisie, fyngekap
  1. Voorverhit braaikuiken.
  2. Whisk all the eggs, 1½ tablespoons cheese, ¼ teaspoon salt, and ¼ teaspoon pepper in large bowl.
  3. Heat olive oil in medium nonstick broiler-proof skillet over medium heat. Add onion and sauté until tender but not brown, about 6 minutes.
  4. Add Kale/ Red chard in 3 batches toss until each begins to wilt before adding next. Besprinkel met sout en peper. Sauté until any liquid in skillet evaporates. Increase heat to medium-high add salami and garlic to skillet and stir 1 minute. Add eggs to skillet stir to distribute evenly. Reduce heat to medium-low, cover, and cook until eggs are almost set but still moist in center, about 4 minutes. Sprinkle remaining 1½ tablespoons cheese over top.
  5. Transfer frittata to broiler and cook just until set in center and beginning to brown, about 1 minute.
  6. Using flexible spatula, loosen frittata around edges. Slide frittata out onto platter. Bedien warm of by kamertemperatuur.

I am now on the weekly egg delivery list and with my very first batch I made frittata to be specific, kale frittata with fresh Parmesan cheese and spicy pepperoni.

My family loves this kale frittata and they are always happy when they see it on the menu. It is simple and quick to prepare, but also a very healthy and hardy meal. Perfect for breakfast or dinner. Geniet dit!


  • 8 large organic eggs
  • 3 tablespoons freshly grated Pecorino Romano or Parmesan cheese, divided
  • ¼ teaspoon coarse kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 eetlepels ekstra-olyfolie
  • 1 medium ui, in dun skyfies gesny
  • 1 bunch organic Kale or Red chard (about 10 ounces), stems and center ribs cut away, leaves coarsely chopped
  • 2 ounces pepperoni or thinly sliced Italian spicy salami, cut into ½-inch pieces (about ⅔ cup)
  • 1 knoffelhuisie, fyngekap
  1. Voorverhit braaikuiken.
  2. Whisk all the eggs, 1½ tablespoons cheese, ¼ teaspoon salt, and ¼ teaspoon pepper in large bowl.
  3. Heat olive oil in medium nonstick broiler-proof skillet over medium heat. Add onion and sauté until tender but not brown, about 6 minutes.
  4. Add Kale/ Red chard in 3 batches toss until each begins to wilt before adding next. Besprinkel met sout en peper. Sauté until any liquid in skillet evaporates. Increase heat to medium-high add salami and garlic to skillet and stir 1 minute. Add eggs to skillet stir to distribute evenly. Reduce heat to medium-low, cover, and cook until eggs are almost set but still moist in center, about 4 minutes. Sprinkle remaining 1½ tablespoons cheese over top.
  5. Transfer frittata to broiler and cook just until set in center and beginning to brown, about 1 minute.
  6. Using flexible spatula, loosen frittata around edges. Slide frittata out onto platter. Bedien warm of by kamertemperatuur.

I did a bit of improv since I didn’t have any salami.
Instead I diced some chorizo and sauteed that for a while, let it cool then added it to the egg mix along with the kale.
I also sauteed small cubes of potato, in the same pan the chorizo was cooked in, and added 1tsp smoked paprika, before adding that too.
